Malabar Chicken Curry (recipe)

I forgot to include "Food" as a survey question, but have already had two votes for it, so here's a recipe for Malabar Chicken Curry

On our first night at Malabar Serenity, we ordered à la carte, and were very impressed. When the chef, Riheesh, came to ask us how we enjoyed the meal, we replied 'very much'. In the ensuing conversation, it was agreed that we would gladly eat whatever he chose to prepare for us. To say the least, we were not disappointed. In fact the only complaint we had about dinner is that we couldn't see it! The setting was stunning, but lit only by fairy lights wrapped around pillars, and a couple of candles at each table.

All the dishes were astonishing, but one was exceptionally good - the chicken curry. As the chef/hotel has no plans yet to publish a cookbook, we requested, and received, a copy of the recipe. We haven't yet tried making this, and I'm reproducing the recipe largely verbatim, so I offer no guarantee that I've read it correctly or if the quantities work. (T = tablespoon).

Malabar Chicken Curry
Makes: lots

Ingredients

  • 3T coconut oil
  • 20g whole spices (cinnamon, cardamoms, cloves, peppercorns, star anise)
  • 2T ginger
  • 2T garlic
  • 200g onions
  • 2T coriander powder
  • 2T chilli powder
  • 1 T turmeric powder
  • 2 whole tomatoes
  • 2 sprigs curry leaves
  • 2T cashewnut paste
  • 3 cups coconut milk
  • salt, to taste
  • 1 whole chicken, boned
Preparations [sic]
  1. Chickens cutting into small cube pieces and boiled with turmeric powder water and salt.
  2. Heat the pan, add coconut oil and whole spices. Heat well.
  3. After add sliced ginger, garlic and sliced onions. Cook onions well, until its turn brown colour.
  4. After add coriander powder, chilli powder and turmeric powder. Mix it well.
  5. Then add, sliced tomato and curry leaves. Cook tomato well.
  6. Finally put in cashewnut paste, coconut milk, salt and boiled chickens. And it cooks for 2 to 3 minutes.
